Firewood Pizza Capricciosa (Capricciosa)



Wheat flour - 255 gr.

Warm water - 185 gr.

Yeast (dry) - 10 g

Salt - 10 gr.

Sugar - 5 gr.


Tomato paste - 180 gr.;

 Mozzarella cheese - 80 gr.;

 Pamezan cheese - 20 gr.; 

Champignons - 50 gr (2 medium in size); 

Ham (cured ham) - 50 gr.;

 Artichokes (pickled) - 50 gr.; 

Tomatoes - 50 gr.; 

Basil - for decoration.

The recipe for pizza on the wood of Caprichosa (Capricciosa). The classic recipe prepared in the wood-burning stove ТМ Vulcan. Compliance with Italian traditions in Ukraine!

A pizza recipe in a wood-fired oven, in general, is no different from pizza recipes for a gas or electric oven. We offer Capricciosa pizza recipe, which can be prepared in a wood-burning pizza oven PRO - 7 Vulcan. Pizza in such an oven is baked on a hearth made of fireclay brick. This guarantees a very quick baking of the dough and the readiness of the whole pizza. The cooking time for any pizza recipe in the oven is no more than 4 minutes. Pizza is placed in the oven at a temperature of 300 ° C. IMPORTANT! In the baking process, it is necessary to rotate the pizza, creating conditions for uniform bakin.

Pizza order: On the basis of warm water, salt, sugar and dried yeast and 1/3 of the flour, the dough is kneaded. Opara is placed for 15-20 minutes in a warm place. The dough is kneaded with the addition of the remaining volume of flour and rolled up to a thickness of 5 mm. Tomato sauce, Mozzarella cheese (whole mini or slices), mushrooms, artichokes, ham (thin slices), tomatoes and grated Parmesan cheese are laid out on the prepared base. After baking, pizza is decorated with basil (optional).

Artichokes, a rather rare delicacy in the vastness of Ukraine. And if they are not in the arsenal of your products, you can safely exclude them from the recipe. As an experiment, pickled artichokes can be replaced with pickled bell peppers. Of course, Capricciosa's classic pizza in this case will not work, BUT fragrant and delicious pizza on wood - YES!
